This gluten-free and vegan butternut squash lasagna is made with thinly sliced butternut squash in place of noodles and cashew cheese in place of regular dairy cheese (if you can eat dairy feel free to use regular cheese). Layered between the squash and cheese you’ll find kale, garlic, nutritional yeast, olive oil, and seasonings.
