An Asian-flavoured vegetable noodle salad with tofu. Vegan, gluten-free, and super quick and easy, this makes a great light lunch. This salad does not use noodles but is instead made with spiralized vegetables like carrots, zucchini, and onions. If you can’t eat tofu, it could easily be ommited.
